Thai Eggplant Salad ยำมะเขือ
Thai eggplant salad consists of grilled eggplant, shrimp, ground chicken and roast peanuts. The salad is tossed with a savory Thai dressing. Take the first bite and you will explore soft eggplant and crunchy peanut with a piquant taste. One bite will not be enough. I can’t stop craving this salad. It is so yummy and refreshing. Oh yeah! It embodies exquisite Thai cuisine.
When I was a kid, eggplant was my least favorite vegetable. Many eggplant dishes I had for lunch at school weren’t impressive. They had no taste and the texture was too soggy. Fortunately, my taste palate has changed and I have learned to appreciate eggplant more after I cooked it for myself.

Of course I like to make this exquisite dish at home, as well. It is crucial to remember not to cook the eggplant too much; it will get mushy. I usually like to add more textured items also, such as some nuts to offer some crunchiness.
Thai Eggplant Salad Ingredients
2 Green eggplant or purple eggplant or 1 Italian eggplant
5 large shrimp
2 tbsp of ground chicken
1 tbsp of roasted peanuts
1 tbsp of chopped chili
2 tbsp of fish sauce
2 tbsp of lime juice
2 tbsp of palm sugar
¼ of sliced red onion
1 chopped spring onion
1 tbsp of vegetable oil
Water to cook shrimp and chicken
Thai Eggplant Salad Directions
- Brush the eggplant with oil and grill or put it in a preheated oven 400F or 200C degrees. Cook the eggplant and transfer to a plate.
- Cook the shrimp and ground chicken in boiling water for a couple of minutes and set aside.
- Combine the lime juice, palm sugar, fish sauce and chopped chili mix to make a dressing. Taste your dressing and adjust to fit your taste.
- Add the shrimp, ground chicken, red onion, green onion, peanuts to the dressing bowl.5
- Pour the mixture over the cooked eggplant.
- Garnish with cilantro and enjoy the salad.

Here are some tips for picking out good eggplants at grocery stores. You should select firm, shiny and smooth skinned eggplants. The color should be bright either purple, green or white. Try to avoid eggplants that are covered with wax. The top should be green and looks fresh.
